There are various different ways to make duffins, with some recipes suggesting as many as five or six eggs. The jam can either be carefully spoon in the centre of the cake mix when it is being added to the tins (before baking), or piped in afterwards in the same way that donuts are filled with their runny jam, when they have been cooked and are cooling down.
