Nutritionists tend to agree that when fruit and vegetables have been frozen within a few hours of picking, all of the goodness is retained. However, by freezing summer fruit berries, which are packed with juices, their texture is a little softer, almost mushy, once they have been defrosted, depending upon the actual fruit itself.
