These crowns of rhubarb leaves should not be picked for their first year of growth, so that they establish quicker and gain strength. Of note, only the stalks should be eaten, as the leaves are actually poisonous. Rhubarb stems are most commonly used as the principle ingredient in pies, tarts and crumbles.
